Banana Bread

Banana Bread


1 cup plain flour
1 cup brown sugar
1 tea spoon baking powder
½ teaspoon salt
½ teaspoon bi carb soda
½ cup chopped walnuts (can be omitted)
1 egg
½ cup milk
1 teaspoon vanilla extract
2 table spoons olive oil
2 ripe bananas mashed

Preheat the oven to 180C

Chop the Walnuts and set aside.
In a large mixing bowl, place flour, sugar, baking powder, salt and bi-carb soda. Mix well with a spoon, add the chopped walnuts. In a separate bowl, lightly beat the egg, add milk, vanilla extract and oil and mix together.
Fold in the mashed bananas into the dry ingredients followed by the wet ingredients. Mix until combined and pour into a lined loaf tin.
Bake for 50 minutes. To check if the loaf is cooked, press gently with your finger, if it bounces back it is cooked or insert a skewer in the middle, if it comes out clean the cake is cooked, otherwise cook for additional 5-10 minutes.

Serve warm or at room temperature. Can be stored in an air tight container for 3-4 days.
