Ingredients
Milk 1 litre
yoghurt (Starting culture - use two tablespoons of your favorite shop bought yoghurt)

Pour milk in a saucepan and bring to the boil, skim the layer of cream that forms on top
Turn of the gas and leave to cool for 20 minutes or until you can place your finger in the milk and keep it there and count until 10 Mix the starting culture and place mixture in the container you want to set the yoghurt - it can also be set in the saucepan you boiled the milk ( less washing up).
Cover the container and wrap
with a tea towel and place in a dark place undisturbed for at least 8
hours. I often do this at bedtime, so leave it standing overnight. In the
morning, check your beautifully set yogurt and refrigerate it. Will keep for 5-
7 days. And you can now start using your own starting culture to make yoghurt
in the future.
Tips
when it is really cold, wrap the
container in AL foil followed by tea
towels and place in warm oven
